Grilled Corn
WITH ONION GLAZE
Grilled corn-on-the-cob is a local favorite, often found being sold by vendors with push carts. The corn can be boiled and then grilled, or put straight on the fire inside the husks. However, it is important to check if you are buying sweet corn, which is the yellow variety in Cambodia, as opposed to the white corn which is shorter with a pasty consistency.
MAKE IT AT HOME!
GRILLED CORN WITH ONION GLAZE
INGREDIENTS
● 6 ears corn, husks and silk removed
● 2 tablespoons vegetable oil
● 2 tablespoons fish sauce
● 2 tablespoons water
● 1 1/2 tablespoons sugar
● 1 teaspoon salt
● 2 green onions, white parts only, thinly sliced
● vegetable oil, for brushing
INSTRUCTIONS
- Heat your grill – either charcoal or gas.
- Use a brush to lightly coat the corn with oil and then place on the grill.
- Turn every 2-3 minutes creating a nice char on the kernels. Cook for 12-15 minutes until tender.
- While cooking, mix the fish sauce, sugar, salt and water in a bowl until dissolved.
- In a saucepan, heat 2 Tbsp of oil over medium heat until hot, but not smoking.
- Add the liquid mixture carefully into the saucepan and add green onions. Stir briskly for about 2 seconds until the sauce begins to thicken, then remove from heat.
- After sauce cools, brush the corn with sauce and enjoy!
